Brie by gum

Brie by gum is our signature cheese which began our journey into cheesemaking and is one of the UK’s only triple creme cheeses.  It is a white, mould-ripened cheese which is made with additional cream to give a fat content (fat in dry matter) in excess of 75%.  The delicate, mushroomy rind gives way to a buttery, soft and rich paste which remains stable throughout its life.

Who doesn’t like truffle, right?  Our indulgent Brie is taken to a completely new level, with the addition of Italian Summer Truffles.  A generous amount of chopped truffle (not oil) is added by hand during the moulding process, to provide a layer of real truffle which permeates the paste throughout the maturation.

This is a rich, decadent cheese which will hold its own on ANY cheeseboard and will leave the earthiness of truffle lingering on your pallette.

Go t' foot oft' Stairs

Go T’ Foot oft’ Stairs is a stunning cylindrical soft goats cheese made using milk from a Skipton based farm and aged for a period of four weeks.  The cheese is ash ripened and a thin, dark rind gives way to a soft and silky centre.  When eaten young there is a fresh, citric taste, with a developing nutty taste of goat cheese which strengthens as the cheese ages.

Summat Stinky

Summat Stinky is our newest cheese to be released in October 2023.  The cheese is washed in Saltaire beer during the ageing process which gives it the distinctive aroma of a washed rind!  The cheese is soft and sweet, with lots of umami and an inescapable aftertaste of beer.  As this cheese ages the paste will continue to break down until it oozes and is best eaten with a spoon, whilst the flavour will intensify.  But be warned – so too will the aroma!

Hard Cheese

A unique, semi-hard cheese which represents our interpretation of a classic cheese from the Aire Valley-modified-modified

Airedale

Airedale is a semi-hard cheese and is our very own creation.  Whilst researching recipes during our cheesemaking journey, we were inspired by the history of cheesemaking and methods used over the centuries.  For this recipe we forgot about the science and (very) expensive equipment involved in cheesemaking for a second and adopted processes more likely to be used by busy farmers in Yorkshire.  This is the result.  Lactic in flavour with a tang that is reminiscent of a Wensleydale / Lancashire cross.

Yorkshire Kay-Soa

Based on a classic Spanish Queso, this cheese is available at both 2 months and 6 months.  The cheese is pressed before being rubbed with paprika, chili and oil and matured to allow the flavours to infuse.  When served at two months it shares a similar texture to Feta and makes a wonderful salad cheese
